Truthfully, these are more like mini frittatas but since I eat them like a burger and it just sounds more fun, I call the brussel sprout burgers.
Being such a huge fan of brussel sprouts I often make extra large batches just so I can eat the leftovers. This is one of my favorite ways to use b.s. leftovers. It makes for a hearty breakfast, lunch, or a light dinner.
- ½-3/4c shredded and cooked sprouts
- 1egg
- 1Tb sausage *optional, I often have bulk sausage open so I typically brown off a little bit before adding my greens.
- Cheese for topping
- 1 large roll, split and toasted
In a cast iron skillet or small sauté pan, cook sausage. Add sprouts and toss till warmed through.
Push the brussel sprouts into a nest in the pan, one nest per burger. Crack an egg into the middle of it.
Using a rubber scraper, crack the yolk and fold the outter bits of the nest into the eggy center.
When it no longer sticks to the pan (1-2min) gently flip and allow the other side to brown.
Add a slice of cheese if desired and slide burger onto the waiting toasted bun. Enjoy!
I like to make these burgers one or two at a time. If you would like to make more than that, try scrambling the eggs, pouring over the sprouts and scooping into a pan. Use a rubber scraper to shape into burger form.
