Put those preserves to work.
This thick and cheesy, savory-sweet caramelized onion dip made with a scoop of Potlicker jelly is perfect for digging into while watching the ball game but is also appropriate for movie night, game night, or “I just felt like eating dip for dinner” night.
We suggest using Oatmeal Stout or Rosemary Garlic Chablis but you can use your own favorite flavor of Potlicker beer or wine jelly.
Skillet Caramelized Onion Dip
- 1Tb butter or oil
- 3 medium onions diced
- 1-2 cloves garlic crushed
- 1/4c Potlicker Beer or Wine Jelly
- pinch cayenne pepper (optional)
- salt and pepper to taste
- 4oz cream cheese
- 4oz shredded cheddar, swiss, or gruyere cheese
Heat the butter in a large skillet or cast iron. Sauté the onions over medium heat until they begin to turn golden brown and stick to the pan (30-40 min). Stir in the garlic and cook for 2 minutes more.
Add the beer jelly to the pan and stir scrapping up the fond (aka: the brown bits trying to burn to the bottom). Season with salt and pepper(s).
Stir in the cheese and heat until bubbly. Serve hot with chips and veggies for dipping. We’ve moved ours to a little crock pot that will keep this dip warm and ready to dive in.
Yields approximately 2 cups of dip.
