Soon there will be thousands of boiled and dyed eggs taking up valuable space in refrigerators across the nation. Yes, you will make TONS of deviled eggs in attempt to use them all up but nothing breaks a cooks heart more than finding empty egg whites after all the tedium of individually filled eggs (everyone knows kids eat the good stuff out of the center!). You could feed a few to the dog to use up eggs but be warned dog farts after Easter are some of the most toxic.
In my opinion, the best way to use up left-over Easter eggs is Egg Salad. While egg plus mayo will certainly work, that is a whole lotta egg going on there. Instead, we use avocado and mustard to make flavorful and healthier egg salad.
Using avocado in place of mayo is a healthy substitution that makes the egg salad rich and creamy without the greasy mouth-feel of mayonnaise. Not only that, avocados are loaded with healthy fats and over 25 nutrients.
Mustard is one of my secret flavor enhancers and a helpful anti-inflammatory. The flavor or type of mustard makes a huge difference here. You could keep it simple with Dijon or go wild and crazy with wasabi-mustard, dill mustard, curry mustard, etc.
Avocado & Egg Salad
- 6-7 eggs, hard boiled and peeled
- 1 avocado, peeled and cubed
- ½ c celery, minced
- 1 Tb red onion, minced
- 2-3 TB mustard
- 1/4ts dill weed
- Pinch garlic powder
- Salt and pepper to taste
In a medium bowl smash peeled eggs with a fork until crumbly (or desired texture). Add the remaining ingredients and smash together until the mixture is well blended. Serve on toasted sourdough or white bread with no crusts. 😉
Store leftovers overnight in an airtight container. Keep fresh with plastic wrap pressed directly on the surface of the egg salad.
Avocados have a tendency to turn brown therefore this spread should not be made days in advance or left out in warmer temperatures.
