Summer is finally and officially here. Warm weather, sun burns, and popsicles are the hallmarks of summer in my memory. Freezer pops that melted into a sticky mess in my hands and ran down my elbows.
The good news is no one is too old for any of those things.
To make jam popsicles you need 2 basic things: a popsicle base & a jam. Add-ins are optional.
The Base: I chose coconut milk for the base because I just can’t get enough of the flavor but you could use yogurt, milk, pudding, or juice. If using a thicker base like greek yogurt, you might want to thin it out a bit with milk or water.
The Jam: Of course I used my own Potlicker jam for flavor. I picked Pear Ginger Jam because it sounded like a winner with coconut milk 😉 If you are fresh out of Pear Ginger jam try Blueberry Sage, Strawberry Chipotle or your own homemade preserves.
Add in: Mint & lime compliment the coconut milk and ginger of the jam and lend cooling flavors, making for a killer summer frozen pop. Not into pear-minty pops? You can add other flavors like herbs or even granola. How about Blueberry, yogurt, granola pops? Yup. You can do that too.
Pear Ginger Jam Popsicles
- 1/3c Pear Ginger Jam
- 1 can coconut milk
- 1/2Tb mint, finely chopped
- 1tsp lime zest, chopped
- juice from half a lime
Whisk together all the ingredients in a large bowl. Optionally, combine in a blender for 30 seconds.
Divide the mix evenly between 4 med sized popsicle molds. Freeze for 4 hours. Enjoy!
